Marinated cucumber and tomato salad recipe

Here’s a simple, fresh marinated cucumber and tomato salad that works great as a side dish or light meal 🥒🍅

Marinated Cucumber & Tomato Salad

Ingredients

  • 2 large cucumbers, thinly sliced

  • 2 cups cherry tomatoes, halved (or 2–3 regular tomatoes, chopped)

  • ½ small red onion, thinly sliced (optional)

  • 2 tbsp fresh parsley or dill, chopped (optional)

Marinade

  • ¼ cup olive oil

  • 2 tbsp red wine vinegar (or apple cider vinegar)

  • 1 tsp sugar or honey

  • ½ tsp salt (adjust to taste)

  • ¼ tsp black pepper

  • 1 small clove garlic, minced (optional)

Instructions

  1. Place cucumbers, tomatoes, and onion in a large bowl.

  2. In a small bowl or jar, whisk together all the marinade ingredients.

  3. Pour the marinade over the vegetables and toss gently to coat.

  4. Cover and refrigerate for at least 30 minutes (1–2 hours is even better).

  5. Toss again before serving and sprinkle with fresh herbs if using.

Tips & Variations

  • For extra crunch, sprinkle a little salt on the cucumbers and let them sit 10 minutes, then drain before mixing.

  • Add crumbled feta for a Mediterranean twist.

  • Swap vinegar for lemon juice for a brighter flavor.
