Loaded Potato & Meatloaf Casserole

Ingredients

Meatloaf Layer

  • 1½ lbs ground beef (80/20 works best)
  • 1 cup breadcrumbs or crushed crackers
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 eggs
  • ½ cup milk
  • ½ cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika or Italian seasoning

Potato Layer

  • 3 lbs russet potatoes, peeled and cubed
  • ½ cup sour cream
  • ½ cup milk or heavy cream
  • 4 tbsp butter
  • Salt & pepper to taste

Loaded Toppings

  • 2 cups shredded cheddar cheese
  • 6–8 slices bacon, cooked and crumbled
  • 3 green onions, sliced
  • Extra sour cream (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Make the meatloaf layer
    In a large bowl, mix all meatloaf ingredients until just combined.
    Press evenly into the bottom of a greased 9×13-inch baking dish.
  3. Bake meatloaf
    Bake uncovered for 25–30 minutes, until partially cooked.
    Drain excess grease if needed.
  4. Prepare mashed potatoes
    Boil potatoes in salted water until fork-tender (15–20 minutes).
    Drain and mash with butter, sour cream, milk, salt, and pepper until creamy.
  5. Assemble casserole
    Spread mashed potatoes evenly over the meatloaf layer.
  6. Add toppings
    Sprinkle cheddar cheese and bacon over the potatoes.
  7. Final bake
    Return to oven and bake 15–20 minutes, until cheese is melted and bubbly.
  8. Garnish & serve
    Top with green onions and extra sour cream if desired. Let rest 5–10 minutes before slicing.

  • 🔥 Add a layer of BBQ sauce or ketchup between meatloaf and potatoes
  • 🧀 Mix cheese directly into the mashed potatoes for extra richness
