Here’s a fun, family-favorite recipe for Loaded Cheesy Pocket Tacos — crispy on the outside, melty and packed with flavor inside 🌮🧀


🌮 Loaded Cheesy Pocket Tacos

Ingredients (Makes 8 pockets)

For the filling:

  • 1 lb (450g) ground beef (or ground turkey)
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • ¼ cup water
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack or Mexican blend cheese
  • ½ cup black beans (optional)
  • ½ cup corn kernels (optional)

For assembling:

  • 8 small flour tortillas
  • 2 tbsp melted butter or oil (for brushing)

Optional add-ins:

  • Diced jalapeños
  • Cooked rice
  • Cream cheese (for extra creaminess)

Instructions

1️⃣ Cook the Filling

  • In a skillet over medium heat, brown ground beef until fully cooked.
  • Drain excess grease.
  • Add taco seasoning and water; simmer 3–5 minutes until thickened.
  • Stir in beans and corn if using. Remove from heat.

2️⃣ Assemble the Pockets

  • Lay out tortillas.
  • Add a scoop of beef mixture to the center.
  • Sprinkle generously with both cheeses.
  • Fold sides inward, then roll or fold into a sealed pocket (like a burrito or rectangle).

3️⃣ Cook Until Crispy

Skillet Method:

  • Heat a non-stick skillet over medium.
  • Brush pockets lightly with butter or oil.
  • Cook 2–3 minutes per side until golden brown and crispy.

Oven Method:

  • Preheat to 400°F (200°C).
  • Place on baking sheet, brush tops with butter.
  • Bake 12–15 minutes until crisp and golden.

4️⃣ Serve With

  • Sour cream
  • Salsa or pico de gallo
  • Guacamole
  • Shredded lettuce & diced tomatoes

🔥 Make It Extra Loaded

  • Add crushed tortilla chips inside for crunch.
  • Mix cream cheese into the beef for ultra-creamy filling.
  • Sprinkle extra cheese on the outside while cooking for a crispy cheese crust.
