Lemon Sugar Cookies

Here’s a classic Lemon Sugar Cookies recipe 🍋🍪—soft, slightly chewy, and bursting with bright lemon flavor.


Ingredients (Makes about 24 cookies)

  • 2¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1½ cups granulated sugar
  • 1 large egg
  • 2 tablespoons lemon juice (fresh)
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • Optional: extra sugar for rolling

Instructions

  1. Preheat oven
    • Preheat to 350°F (175°C).
    • Line baking sheets with parchment paper.
  2. Mix dry ingredients
    • In a bowl, whisk together flour, baking soda, baking powder, and salt.
  3. Cream butter and sugar
    • In a large bowl, beat butter and sugar until light and fluffy.
    • Beat in egg, lemon juice, lemon zest, and vanilla.
  4. Combine
    • Gradually mix in dry ingredients until just combined.
  5. Shape cookies
    • Roll dough into 1-inch balls and place on prepared baking sheets.
    • Optional: roll balls in extra sugar for a sparkling finish.
    • Flatten slightly with the bottom of a glass or your hand.
  6. Bake
    • Bake 8–10 minutes, until edges are just golden.
    • Cool on baking sheet for 2 minutes, then transfer to a wire rack.

Tips & Variations

  • 🍋 Add 1 teaspoon poppy seeds for lemon-poppy flavor.
  • ✨ Drizzle with lemon glaze made from powdered sugar and lemon juice.
  • 🥄 Chill dough 30 minutes before baking for thicker cookies.
  • 🧂 Sprinkle a tiny pinch of sea salt on top for a sweet-salty twist.
