Here’s a quick, crispy Keto Pepperoni Pizza Quesadilla—low-carb, cheesy, and totally hits the pizza craving 🍕🧀

Keto Pepperoni Pizza Quesadillas

Ingredients (1–2 servings)

  • 1½ cups shredded mozzarella cheese (low-moisture works best)
  • ¼ cup grated Parmesan cheese
  • 10–15 slices pepperoni
  • 1–2 tbsp sugar-free pizza or marinara sauce (optional, for dipping)
  • Optional toppings: olives, mushrooms, Italian seasoning, red pepper flakes

Instructions (Skillet Method)

  1. Heat pan
    Heat a non-stick skillet over medium-low heat.
  2. Make cheese base
    Sprinkle half the mozzarella in an even circle in the pan.
    Add Parmesan on top.
  3. Add toppings
    Layer pepperoni and any optional toppings.
  4. Top with cheese
    Sprinkle remaining mozzarella over everything.
  5. Cook & fold
    Cook 3–4 minutes until cheese melts and bottom is golden.
    Carefully fold in half like a quesadilla.
  6. Crisp both sides
    Cook another 1–2 minutes per side until crispy.
  7. Serve
    Let rest 1 minute, slice, and serve with sauce for dipping.

Oven Method (Great for batches)

  1. Preheat oven to 400°F (205°C).
  2. Line a baking sheet with parchment.
  3. Make cheese circles, add toppings, and bake 8–10 minutes.
  4. Fold while hot and let crisp slightly as they cool.

Tips for Best Keto Quesadillas

  • Use low-moisture mozzarella for crispiness
  • Keep heat moderate to avoid burning
  • Let rest briefly so it firms up

Variations

  • Meat lovers: Add cooked sausage or bacon
  • Veggie: Add spinach or bell peppers
  • White pizza: Add garlic butter + ricotta
  • Spicy: Use spicy pepperoni or chili oil
