Here’s a comforting, slow-cooked favorite often called Kentucky Crockpot Potatoes 🥔🧀 — creamy, cheesy, and perfect for potlucks.


Kentucky Crockpot Potatoes

Ingredients

  • 2 lb (900 g) potatoes, peeled and diced
    (Russet or Yukon Gold work best)
  • 1 cup shredded cheddar cheese
  • 8 oz (225 g) cream cheese, cubed
  • 1 can (10.5 oz / 300 g) cream of chicken soup
  • ½ cup sour cream
  • ½ cup milk
  • ½ cup butter, melted
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • Salt & black pepper, to taste
  • Optional: chopped parsley or green onions for garnish

Instructions

  1. Lightly grease the crockpot.
  2. Add diced potatoes.
  3. In a bowl, mix cream of chicken soup, sour cream, milk, melted butter, garlic powder, onion powder, salt, and pepper.
  4. Pour mixture over potatoes and stir to coat.
  5. Top with cream cheese cubes and shredded cheddar.
  6. Cover and cook:
    • Low: 5–6 hours
    • High: 3–4 hours
  7. Stir gently during the last 30 minutes to fully combine cheeses.
  8. Garnish before serving if desired.

Tips & Variations

  • 🥓 Add cooked bacon for extra flavor.
  • 🧅 Mix in sautéed onions for depth.
  • 🌶️ Add a pinch of paprika or cayenne for warmth.
  • 🍗 Swap cream of chicken for cream of mushroom to make it vegetarian.
