ground beef casserole

A simple cabbage & ground beef slow-cooker casserole is an easy “dump and cook” meal. You just layer the ingredients and let the slow cooker do the work. 🥬🍲

Ingredients

  • 1 lb ground beef
  • 1 small cabbage, chopped
  • 1 small onion, diced
  • 2 cups tomato sauce (or crushed tomatoes)
  • 1 cup cooked rice (optional but makes it more casserole-like)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Brown the ground beef in a pan first and drain excess grease.
  2. Add to the slow cooker.
  3. Dump in the chopped cabbage, onion, tomato sauce, rice, and seasonings.
  4. Stir everything together.
  5. Cook on LOW for 5–6 hours or HIGH for 3–4 hours until cabbage is tender.
  6. If using cheese, sprinkle it on top during the last 10–15 minutes so it melts.

Tips

  • Add 1 diced bell pepper for extra flavor.
  • If it seems dry, add ½ cup beef broth.
  • For a low-carb version, skip the rice.
