Ground beef and potato skillet

Here’s a simple, hearty Ground Beef and Potato Skillet—one pan, budget-friendly, and easy to customize.

Ingredients

  • 1 lb ground beef
  • 3–4 medium potatoes, diced small (Yukon gold or russet)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp oil (olive or vegetable)
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt (to taste)
  • ¼ tsp black pepper
  • Optional: ½ tsp chili powder or smoked paprika
  • Optional toppings: shredded cheese, green onions, sour cream, parsley

Instructions

  1. Cook the potatoes
    Heat 1 tbsp oil in a large skillet over medium heat. Add diced potatoes, season lightly with salt and pepper, and cook 10–12 minutes, stirring occasionally, until golden and tender. Remove from skillet and set aside.
  2. Brown the beef
    Add remaining oil to the skillet. Add ground beef and onion. Cook until beef is browned and onion is soft. Drain excess grease if needed.
  3. Season & combine
    Add garlic, paprika, garlic powder, onion powder, salt, pepper, and any optional spices. Cook 30 seconds until fragrant.
  4. Finish
    Return potatoes to the skillet. Stir everything together and cook 3–5 minutes so flavors combine.
  5. Serve
    Top with cheese or fresh herbs if desired. Serve as-is or with a side salad.

Easy Variations

  • Cheesy: Sprinkle cheese on top and cover until melted.
  • Southwest: Add cumin, chili powder, and a can of drained corn.
  • Breakfast-style: Add a fried egg on top.
  • Veg boost: Toss in bell peppers or green beans with the onions.
