Green chili stew

Here’s a classic New Mexico–style Green Chili Stew—simple, hearty, and rich with roasted green chile flavor. I’ll give you a traditional version plus optional variations.


🌶️ Green Chili Stew (New Mexico Style)

Serves: 4–6
Prep Time: 15 min
Cook Time: 1 hour (or longer for deeper flavor)


Ingredients

  • 1½–2 lbs pork shoulder, cut into small cubes
    (or use chicken thighs, beef, or make it vegetarian—see variations)
  • 2 Tbsp oil (vegetable or lard)
  • 1 medium onion, diced
  • 3–4 cloves garlic, minced
  • 1–2 cups roasted green chiles, chopped
    (Hatch green chiles if you can get them; heat level to taste)
  • 3–4 potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 tsp cumin
  • 1 tsp oregano (Mexican oregano if available)
  • Salt & black pepper to taste
  • Optional: 1 tomato, chopped or ½ cup canned diced tomatoes
  • Optional: cilantro, lime, or shredded cheese for serving

Instructions

1. Brown the meat

  • Heat oil in a large pot.
  • Add pork cubes and brown on all sides.
  • Season with salt and pepper.

2. Add onion and garlic

  • Stir in onion and cook until softened (3–5 min).
  • Add garlic and cook 30 seconds.

3. Add green chiles & spices

  • Add chopped roasted green chiles, cumin, and oregano.
  • Stir to coat the meat and onions.

4. Add broth & simmer

  • Pour in broth (enough to cover everything).
  • Bring to a boil, then reduce heat to low.
  • Simmer 30–40 minutes, until the pork is tender.

5. Add potatoes

  • Add diced potatoes and cook another 20–30 minutes,
    until potatoes are soft and the stew has thickened a bit.

6. Taste & adjust

  • Add salt/pepper.
  • If you want it hotter, stir in extra roasted or fresh chile.

🌶️ Variations

Chicken Green Chile Stew

  • Substitute 1½ lbs chicken thighs, cubed.
  • Reduce initial simmer to 20–25 minutes.

Beef Green Chile Stew

  • Use stew beef; increase simmer time to 1–2 hours until tender.

Vegetarian / Vegan

  • Skip meat; add:
    • 2 cups diced zucchini or squash
    • 1–2 cans beans (pinto or white beans)
  • Use vegetable broth.

Thicker Stew

  • Mash a few potatoes at the end
  • Or add 1 Tbsp flour mixed with a little water as a slurry

Brighter Flavor

  • Add a squeeze of lime and some fresh cilantro before serving.

🍽️ Serving Ideas

  • With warm flour or corn tortillas
  • Over rice
  • With cheese and sour cream
  • Topped with avocado
