🧄 Garlic Cauliflower & Mushrooms

🧂 Ingredients

  • 1 medium head cauliflower, cut into florets
  • 8 oz mushrooms (button or cremini), sliced
  • 3 tbsp olive oil or butter
  • 4 cloves garlic, minced
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper
  • ½ tsp dried thyme (optional)
  • 1 tbsp chopped fresh parsley (optional garnish)
  • 1 tbsp lemon juice (optional, for brightness)

👩‍🍳 Instructions

1️⃣ Cook the Cauliflower

  • Heat 2 tbsp oil or butter in a large skillet over medium heat.
  • Add cauliflower florets in a single layer.
  • Cook 6–8 minutes, stirring occasionally, until lightly golden and tender.
  • Remove from pan and set aside.

2️⃣ Sauté the Mushrooms

  • Add remaining oil to the skillet.
  • Add mushrooms and cook 5–7 minutes until browned and moisture evaporates.

3️⃣ Add Garlic

  • Stir in garlic and thyme.
  • Cook 30–60 seconds until fragrant (don’t let garlic burn).

4️⃣ Combine

  • Return cauliflower to the skillet.
  • Season with salt and pepper.
  • Cook together 2–3 more minutes.
  • Finish with lemon juice and parsley if using.

🔥 Optional Add-Ins

  • Sprinkle with grated Parmesan cheese
  • Add red pepper flakes for heat
  • Stir in spinach during the last minute
  • Toss with crispy bacon bits

🍽️ Serve With

  • Grilled chicken or steak
  • Baked salmon
  • As a keto-friendly side dish
