Garbage Bread

Here’s a classic, comfort-food style Garbage Bread recipe—crispy on the outside, loaded on the inside, and totally customizable 🍞

Garbage Bread (Stuffed Pizza Bread)

Ingredients

Dough

  • 1 lb pizza dough (store-bought or homemade)

Fillings (mix & match)

  • 1 cup cooked ground beef or Italian sausage
  • ½ cup pepperoni slices (quartered)
  • ½ cup cooked bacon, chopped
  • ½ cup bell peppers, diced
  • ½ cup onion, diced
  • ½ cup mushrooms, chopped (optional)
  • 1½ cups shredded mozzarella cheese
  • ½ cup shredded cheddar or provolone

Seasoning & Extras

  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • Salt & pepper, to taste
  • ½ cup marinara or pizza sauce (optional, for inside or dipping)

Topping

  • 1 egg, beaten (egg wash)
  • 2 tbsp melted butter
  • 1 tsp garlic powder
  • 1 tbsp grated Parmesan
  • Dried parsley or oregano

Instructions

  1. Preheat oven
    Set oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Prep the filling
    In a bowl, combine meats, veggies, cheeses, seasoning, and sauce (if using). Mix well.
  3. Roll the dough
    On a floured surface, roll pizza dough into a large rectangle (about 10×14 inches).
  4. Fill & roll
    Spread filling evenly over dough, leaving a 1-inch border.
    Roll tightly from the long side like a jelly roll. Pinch seams and tuck ends under.
  5. Top it
    Place seam-side down on the baking sheet.
    Brush with egg wash. Mix melted butter, garlic powder, Parmesan, and herbs; brush on top.
  6. Bake
    Bake for 30–35 minutes, until deep golden brown.
  7. Rest & slice
    Let rest 5–10 minutes before slicing. Serve with warm marinara for dipping.
