For BEEF ENCHILADAS with extra cheese on top

Here is a restaurant-style BEEF ENCHILADA recipe with EXTRA CHEESE on top—rich, saucy, cheesy, and totally satisfying!


BEEF ENCHILADAS (Extra Cheesy!)

Ingredients

For the beef filling:

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • ½ teaspoon oregano
  • Salt & pepper to taste
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • ¼ cup enchilada sauce (to moisten the filling)

For the enchiladas:

  • 10–12 corn tortillas (or flour if preferred)
  • 3 cups enchilada sauce (red is best)
  • 2–3 cups shredded cheese (extra cheese for topping!)
  • Optional: chopped cilantro, sliced olives, green onions

Instructions

1. Make the beef filling

  1. In a skillet, brown the ground beef over medium heat.
  2. Add diced onion and garlic; cook until soft.
  3. Season with cumin, chili powder, paprika, oregano, salt & pepper.
  4. Stir in ¼ cup enchilada sauce and 1 cup cheese.
  5. Mix until melted and combined. Remove from heat.

2. Prep the tortillas

Corn tortillas roll better if warmed:

Option A (quick):

  • Wrap in damp paper towel and microwave 30–45 seconds.

Option B (best flavor):

  • Lightly fry tortillas in a little oil 10–15 seconds per side.

3. Assemble the enchiladas

  1. Preheat oven to 375°F (190°C).
  2. Spread ½ cup enchilada sauce in the bottom of a baking dish.
  3. Take one tortilla → add 2–3 tbsp beef filling → roll tightly.
  4. Place seam-side down in the dish.
  5. Repeat with all tortillas.

4. Add sauce & EXTRA CHEESE

  1. Pour remaining enchilada sauce evenly over the rolled tortillas.
  2. Cover generously with 2–3 cups shredded cheese.
    • More if you want it extremely cheesy!

5. Bake

  • Bake 20–25 minutes until cheese is melted, bubbly, and slightly golden.

6. Serve

Top with:

  • Cilantro
  • Sour cream
  • Olives
  • Green onions
  • Sliced jalapeños

Serve with Mexican rice, beans, or a fresh salad.


Tips for Extra Cheesy, Extra Good Enchiladas

  • Use a mix of Monterey Jack + cheddar for perfect melt.
  • Add a small handful of cheese inside each enchilada too.
  • Let the enchiladas rest 5 minutes before serving for cleaner slices.
