Here’s a cozy, flavorful, homestyle Fideo with Potatoes and Ground Beef recipe—Mexican comfort food at its best. It’s savory, filling, and perfect for an easy weeknight meal.


Fideo with Potatoes & Ground Beef

Ingredients

  • 1 lb ground beef
  • 1 cup fideo pasta (or thin vermicelli broken into small pieces)
  • 1 medium potato, peeled & diced small
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) tomato sauce
  • 3–4 cups beef broth or water
  • 1 teaspoon cumin
  • 1 teaspoon chili powder (optional)
  • Salt & pepper to taste
  • 2 tablespoons oil (for browning fideo)
  • Optional: chopped cilantro, lime wedges

Instructions

1. Brown the ground beef

  1. Heat a large skillet or pot over medium-high heat.
  2. Add ground beef and cook until mostly browned.
  3. Add diced onion and garlic; cook until onion softens.
  4. Season with salt, pepper, cumin, and chili powder.
  5. Drain excess grease if needed.
  6. Add diced potatoes and sauté 3 minutes.

2. Toast the fideo

  1. In a separate pan, heat 2 tbsp oil over medium heat.
  2. Add the fideo and toast, stirring constantly, until golden brown.
    • This step gives classic fideo its nutty flavor.
  3. Once golden, remove from heat.

(If you prefer one-pot cooking, you can move the meat mixture to the side and toast the fideo in the same pot.)


3. Combine everything

  1. Add toasted fideo to the pot with beef and potatoes.
  2. Pour in tomato sauce and 3 cups of broth or water.
  3. Stir well and bring to a simmer.

4. Cook

  • Cover and simmer 12–15 minutes, stirring occasionally, until:
    • Potatoes are tender
    • Fideo is soft
    • Liquid has reduced to a thick, hearty consistency

Add extra broth if you want it soupier.


5. Serve

  • Taste and adjust seasoning.
  • Garnish with fresh cilantro if desired.
  • Serve with warm tortillas or bolillos on the side.

Optional Add-Ins

  • Veggies: corn, peas, or diced zucchini
  • Spicy: add jalapeños, chipotle, or crushed red pepper
  • Cheesy: sprinkle queso fresco or shredded cheddar on top
