Hereβs a classic, creamy fettuccine you can dress up or down depending on the mood.
Creamy Fettuccine (Alfredo-Style)
Ingredients (serves 2β3)
- 8 oz fettuccine pasta
- 3 tbsp butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- ΒΎ cup freshly grated Parmesan (important!)
- Salt & black pepper
- Pinch of nutmeg (optional but chef-y)
- Chopped parsley (optional)
How to Make It
- Cook the pasta
Boil fettuccine in well-salted water until al dente.
Reserve Β½ cup pasta water, then drain. - Make the sauce
Melt butter over medium heat. Add garlic and cook ~30 seconds until fragrant.
Pour in cream and simmer gently 2β3 minutes. - Cheese time
Lower heat. Stir in Parmesan until melted and smooth.
Season with salt, pepper, and nutmeg. - Combine
Toss pasta with sauce, adding pasta water a splash at a time until silky. - Finish
Garnish with parsley and extra Parmesan.
