Egg, beef and cheese bites

Here’s a simple, tasty way to make Egg, Beef & Cheese Bites—great for breakfast, snacks, or meal prep.

Ingredients

  • 4 large eggs
  • 250 g (½ lb) ground beef
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1 small onion, finely diced (optional)
  • Salt & black pepper to taste
  • Optional extras: garlic powder, paprika, chili flakes, chopped bell peppers

Instructions

  1. Preheat oven to 180°C / 350°F. Lightly grease a muffin tin or use silicone cups.
  2. Cook the beef in a pan over medium heat until browned. Season with salt, pepper, and any spices. Drain excess fat.
  3. Whisk eggs in a bowl until well mixed.
  4. Assemble
    • Divide cooked beef evenly into the muffin cups.
    • Sprinkle cheese on top.
    • Pour beaten eggs over the mixture (about ¾ full).
  5. Bake for 15–20 minutes, until set in the center and lightly golden.
  6. Cool slightly, then remove and enjoy.

  • Use feta or pepper jack for a flavor twist
  • Store in the fridge up to 4 days or freeze for quick reheating
