Ingredients
- 3 cups all-purpose flour
- 1½ tsp salt
- ½ tsp instant or active dry yeast
- 1½ cups warm water
That’s it. No sugar. No oil. No kneading.
Instructions
- Mix
In a large bowl, stir flour, salt, and yeast. Add water and mix until shaggy and sticky. - Rest (the magic part)
Cover bowl loosely with plastic wrap or a towel.
Let sit at room temperature for 12–18 hours (overnight = perfect). - Preheat oven + pot
Preheat oven to 450°F (230°C).
Place a Dutch oven (with lid) inside to heat for 30 minutes. - Shape (barely)
Turn dough onto floured surface. Fold edges over once or twice — don’t knead. - Bake
Carefully place dough into hot Dutch oven.
Cover and bake 30 minutes.
Remove lid and bake 10–15 minutes more until deep golden and crusty. - Cool
Let cool at least 20 minutes before slicing (steam finishes the crumb).
