Ingredients (Makes 8 scones)

  • 2 cups almond flour
  • ½ cup oat flour (or finely ground oats)
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1–2 tbsp granulated sugar substitute (like Swerve, Monkfruit, or Stevia blend)
  • 1 large egg
  • ¼ cup unsweetened almond milk (or low-fat milk)
  • 3 tbsp melted coconut oil or unsalted butter
  • 1 tsp vanilla extract
  • Zest of 1 orange
  • ½ cup fresh or frozen cranberries, chopped
    • Or ⅓ cup sugar-free dried cranberries if preferred

🥣 Instructions

1. Preheat oven

  • Preheat to 350°F (175°C).
  • Line a baking sheet with parchment paper.

2. Mix dry ingredients

In a large bowl, whisk together:

  • almond flour
  • oat flour
  • baking powder
  • salt
  • sugar substitute

3. Add wet ingredients

In a small bowl, mix:

  • egg
  • almond milk
  • melted coconut oil/butter
  • vanilla
  • orange zest

Pour into the dry ingredients and stir until combined.


4. Add cranberries

  • Gently fold in the chopped cranberries.
  • Dough will be sticky — that’s normal.

5. Shape the scones

  • Place dough on the baking sheet.
  • Form into a thick 8-inch circle.
  • Cut into 8 wedges, like a pizza.
  • Separate pieces slightly.

6. Bake

  • Bake 18–22 minutes, until edges are lightly golden.
  • Cool completely for best texture.

⭐ Optional Glaze (Sugar-Free)

Mix:

  • ⅓ cup powdered sugar substitute
  • 1–2 tsp orange juice

Drizzle on top after cooling.
