🍰 Crumb Cake Recipe

🧾 Ingredients

For the crumb topping:

  • 1 cup all-purpose flour
  • ½ cup brown sugar
  • ½ cup white sugar
  • 1 tsp cinnamon
  • ½ cup melted butter

For the cake:

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup butter (softened)
  • ¾ cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream (or yogurt)

1. Make the crumb topping

  • Mix flour, sugars, and cinnamon.
  • Stir in melted butter until crumbly.
  • Set aside.

2. Prepare the cake

  • Preheat oven to 180°C (350°F).
  • Grease and line an 8-inch pan.
  • Whisk flour, baking powder, baking soda, and salt.
  • In another bowl, beat butter and sugar until fluffy.
  • Add eggs one at a time, then vanilla.
  • Mix in sour cream.
  • Fold in dry ingredients until just combined.

3. Assemble

  • Spread batter in pan.
  • Generously sprinkle crumb topping over the batter (thick layer is key!).

4. Bake

  • Bake for 35–45 minutes, until a toothpick comes out clean.

5. Cool & serve

  • Let cool slightly before slicing.

  • For a New York–style crumb cake, make extra topping and press some into big chunks.
  • Add a thin layer of jam (like strawberry or blueberry) between batter and crumbs.
  • Dust with powdered sugar before serving.
