🍽️ Creamy Beef & Mushroom Rice Bake

Ingredients (Serves 4–6)

  • 450 g (1 lb) ground beef
  • 1½ cups uncooked long-grain rice
  • 225 g (8 oz) mushrooms, sliced
  • 1 medium onion, finely chopped
  • 2–3 cloves garlic, minced
  • 1½ cups beef stock
  • 1 cup milk or cooking cream
  • 1 cup shredded cheese (cheddar, mozzarella, or mix)
  • 2 tbsp oil or butter

Seasoning

  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp dried thyme or mixed herbs
  • Optional: ½ tsp paprika

Instructions

  1. Preheat oven to 180°C (350°F). Lightly grease a baking dish.
  2. Cook beef
    Heat oil in a pan. Add ground beef and cook until browned.
    Add onion and cook until soft. Stir in garlic and mushrooms and cook until mushrooms release moisture.
  3. Season
    Add salt, pepper, herbs, and paprika (if using). Mix well.
  4. Add rice & liquid
    Stir in uncooked rice, beef stock, and milk/cream. Let it simmer gently for 2–3 minutes.
  5. Bake
    Transfer mixture to baking dish. Cover tightly with foil.
    Bake for 30 minutes.
  6. Add cheese
    Remove foil, sprinkle cheese on top, and bake uncovered for 10–15 minutes until bubbly and golden.
  7. Rest & serve
    Let stand 5 minutes before serving.

🌟 Tips & Variations

  • Extra creamy: replace half the milk with cream
  • More veggies: add peas, carrots, or spinach
  • No oven? Simmer gently on stovetop until rice is cooked
  • Healthier: use lean beef and low-fat milk
