Instructions

  2. Make the creamy sauce:
    • In a saucepan, melt vegan butter over medium heat.
    • Stir in flour and cook for 1–2 minutes to form a roux.
    • Gradually whisk in plant-based milk until smooth and thickened.
    • Season with salt, pepper, and a pinch of nutmeg.
  3. Combine peas with sauce:
    • Add the cooked peas to the sauce and stir gently.
    • Simmer for 2–3 minutes to heat through.
    • Add a dash of lemon juice if you want a little brightness.
  4. Toast the bread:
    • Toast slices of bread until golden brown.
  5. Assemble:
    • Spoon the creamed peas generously over the toasted bread.
    • Serve immediately.
