Creamed chipped beef on toast (often called S.O.S.) is a classic comfort dish: salty dried beef in a creamy white sauce served over toast.
What it is
Thin slices of dried, salted beef are warmed in a milk-based white sauce and spooned over toasted bread. It’s rich, savory, and pretty simple to make.
Simple recipe (serves 2–3)
Ingredients
- 1 jar or packet chipped beef (about 2–3 oz), sliced into bite-size pieces
- 2 tbsp butter
- 2 tbsp flour
- 1½–2 cups milk
- Black pepper, to taste
- Toast (white or wheat)
Steps
- Rinse the beef (optional): If it’s very salty, rinse briefly under warm water and pat dry.
- Make the roux: Melt butter in a skillet over medium heat. Stir in flour and cook 1 minute (don’t brown).
- Add milk: Slowly whisk in milk. Cook, stirring, until thick and smooth.
- Add beef: Stir in chipped beef and warm through.
- Season: Add black pepper (salt usually isn’t needed).
- Serve: Spoon over hot toast.
Tips & variations
- Add a splash more milk if it gets too thick.
- A pinch of nutmeg or paprika adds warmth.
- Some people like it over biscuits, hash browns, or mashed potatoes instead of toast.
