Cream Cheese Stuffed Banana Bread

🥄 Ingredients

Banana Bread

  • 2–3 very ripe bananas, mashed
  • ½ cup melted butter (or oil)
  • ¾ cup sugar (mix white + brown if you want extra depth)
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp salt
  • 1½ cups all-purpose flour
  • Optional but encouraged: ½ tsp cinnamon

Cream Cheese Filling

  • 8 oz cream cheese, softened
  • ¼ cup sugar
  • 1 egg
  • ½ tsp vanilla extract

👩‍🍳 Instructions

  1. Prep
    • Preheat oven to 350°F (175°C)
    • Grease or line a loaf pan
  2. Make the banana batter
    • Mix mashed bananas + melted butter
    • Stir in sugar, egg, and vanilla
    • Add baking soda, salt, cinnamon
    • Gently fold in flour (don’t overmix!)
  3. Make the cream cheese layer
    • Beat cream cheese until smooth
    • Add sugar, egg, and vanilla
    • Mix until creamy and lump-free
  4. Assemble
    • Pour ½ of the banana batter into the pan
    • Add all the cream cheese mixture, spread evenly
    • Top with remaining banana batter
    • Optional: swirl gently with a knife
  5. Bake
    • 50–60 minutes
    • Tent with foil if the top browns too fast
    • Toothpick should come out mostly clean (cream cheese may look soft—that’s normal)
  6. Cool (important!)
    • Let cool at least 30 minutes before slicing so the layers set

🔥 Optional Glow-Ups

  • Chocolate chips in the banana batter
  • Chopped walnuts or pecans
  • A cinnamon-sugar sprinkle on top
  • Swap vanilla in the filling for a little lemon zest 👀
