Country Ranch Green Beans ’n Potatoes with Bacon

Ingredients

  • 1 lb (450 g) fresh green beans, trimmed
  • 1 lb baby potatoes or red potatoes, halved
  • 5–6 slices bacon, chopped
  • 1 small onion, diced (optional but tasty)
  • 1 packet (or 2 tbsp) dry ranch seasoning
  • ½ teaspoon black pepper
  • Optional: 1–2 tablespoons butter

Instructions

  1. Cook bacon in a large skillet or Dutch oven over medium heat until crispy.
    Remove bacon and set aside, leaving the drippings.
  2. Add potatoes to the bacon drippings. Cook 8–10 minutes, stirring occasionally, until starting to brown.
  3. Add onion (if using) and cook 2–3 minutes until soft.
  4. Add green beans, ranch seasoning, pepper, and butter (if using). Stir well.
  5. Cover and cook on medium-low for 15–20 minutes, stirring occasionally, until potatoes are tender and beans are cooked to your liking.
  6. Stir bacon back in during the last 2 minutes.
  7. Taste and adjust seasoning if needed.

Tips & Variations

  • Extra creamy: Stir in a splash of cream or a spoon of sour cream at the end.
  • Garlic ranch: Add 2 cloves minced garlic in the last 5 minutes.
  • Slow cooker version: Cook everything except bacon on low 5–6 hours; stir bacon in before serving.
  • One-pan oven method: Roast at 400°F (205°C) for ~35–40 minutes, stirring once.
