🍌 Cottage Cheese Banana Bread

Ingredients

  • 1¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon (optional)
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 2–3 bananas)
  • 1 cup cottage cheese (small curd works best)
  • ½ cup chopped nuts (optional, walnuts or pecans)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla and mashed bananas.
  5. Fold in cottage cheese until just combined.
  6. Gradually fold in dry ingredients and nuts (if using). Do not overmix.
  7. Pour batter into prepared loaf pan and smooth the top.
  8. Bake 55–65 minutes, until a toothpick inserted comes out clean.
  9. Cool in pan 10 minutes, then transfer to a wire rack to cool completely.

  • For a sweeter bread, add ½ cup chocolate chips or raisins
  • Use Greek yogurt instead of cottage cheese for a smoother texture
  • Add ½ teaspoon nutmeg or allspice for extra warmth
  • Slice and toast for breakfast, spread with butter or peanut butter
