Cloud cake

“Cloud cake” usually refers to an ultra-light, airy cake—soft like a cloud, often made with lots of whipped egg whites. Here’s a simple and popular version you can make at home:


☁️ Cloud Cake (Light & Fluffy Vanilla Version)

🧾 Ingredients

  • 4 large eggs (separated)
  • ½ cup (100 g) sugar (divided)
  • ½ cup (120 ml) milk
  • ¼ cup (60 ml) vegetable oil
  • ¾ cup (90 g) cake flour (or sifted all-purpose flour)
  • 1 tsp vanilla extract
  • ½ tsp cream of tartar (or a few drops lemon juice)
  • Pinch of salt

👩‍🍳 Instructions

1. Prep

  • Preheat oven to 300°F (150°C)
  • Line an 8-inch round pan with parchment (don’t grease sides)

2. Mix yolk batter

  • Whisk egg yolks with ¼ cup sugar until pale
  • Add milk, oil, and vanilla
  • Sift in flour and mix until smooth

3. Make meringue

  • Beat egg whites with salt and cream of tartar
  • Gradually add remaining sugar
  • Beat until soft peaks (light and fluffy, not stiff)

4. Fold

  • Gently fold ⅓ of meringue into batter
  • Then fold in the rest carefully to keep the air

5. Bake (water bath method)

  • Pour into pan and tap lightly
  • Place pan in a larger tray with hot water
  • Bake for 50–60 minutes

6. Cool

  • Turn off oven, leave door slightly open for 10–15 minutes
  • Remove and cool upside down (prevents collapse)

  • Extremely soft and airy
  • Light sweetness
  • Slightly jiggly center when warm
  • Almost melts in your mouth

🍓 Optional toppings

  • Whipped cream
  • Fresh berries
  • Powdered sugar
  • Honey drizzle

💡 Tips

  • Don’t overbeat egg whites (stiff peaks = less fluffy cake)
  • Fold gently—this is key to the “cloud” texture
  • Avoid opening the oven early
