Classic Vanilla Butter Cake

Ingredients

  • ½ cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1½ tsp vanilla extract

  • 1½ cups all-purpose flour

  • 1½ tsp baking powder

  • ¼ tsp salt

  • ½ cup milk (room temp)

Instructions

  1. Heat oven to 350°F (175°C). Grease an 8×8 pan or loaf pan.

  2. Cream butter and sugar until light and fluffy.

  3. Beat in eggs one at a time, then vanilla.

  4. Whisk flour, baking powder, and salt.

  5. Add dry ingredients alternately with milk, mixing just until smooth.

  6. Pour into pan and bake:

    • 8×8 pan: 30–35 minutes

    • Loaf pan: 45–50 minutes
      Until a toothpick comes out clean.


Warm Buttermilk Sauce

Ingredients

  • ½ cup butter

  • ¾ cup sugar

  • ½ cup buttermilk

  • 1 tsp vanilla extract

  • ¼ tsp baking soda

Instructions

  1. In a saucepan, melt butter and stir in sugar and buttermilk.

  2. Bring to a gentle boil, stirring constantly.

  3. Boil 1 minute, then remove from heat.

  4. Stir in vanilla and baking soda (it will foam slightly).


Serve It Right

  • Poke holes in warm cake and pour sauce over to soak in
