Chinese Chicken Cabbage Stir-Fry

Ingredients (Serves 3–4)

  • 1 lb chicken breast or thighs, thinly sliced
  • 4 cups green cabbage, thinly sliced
  • 2 tablespoons vegetable or sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced (or 1 teaspoon ground)
  • ¼ cup soy sauce (low-sodium preferred)
  • 1 tablespoon oyster sauce (optional but recommended)
  • 1 teaspoon sugar or honey
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • Optional: sliced green onions, sesame seeds

Instructions

  1. Make the sauce
    • In a small bowl, whisk soy sauce, oyster sauce, sugar, cornstarch, and water. Set aside.
  2. Cook the chicken
    • Heat 1 tablespoon oil in a large skillet or wok over medium-high heat.
    • Add chicken and cook 4–5 minutes, stirring, until browned and cooked through.
    • Remove chicken and set aside.
  3. Stir-fry aromatics
    • Add remaining oil to the pan.
    • Add garlic and ginger; stir-fry 30 seconds until fragrant.
  4. Cook cabbage
    • Add cabbage and stir-fry 3–5 minutes, until tender-crisp.
  5. Combine
    • Return chicken to the pan.
    • Pour in sauce and toss everything together.
    • Cook 1–2 minutes until sauce thickens and coats the stir-fry.
  6. Serve
    • Garnish with green onions or sesame seeds.
    • Serve over steamed rice or noodles.

Tips & Variations

  • 🌶 Add chili garlic sauce or red pepper flakes for heat
  • 🥕 Toss in carrots, bell peppers, or mushrooms
  • 🥬 Use Napa cabbage for a softer texture
  • 🍜 Swap chicken for shrimp or tofu
