🍗 Chicken Spinach & Mushroom Low-Carb Oven Dish

Ingredients

  • 2 lbs boneless, skinless chicken thighs or breasts
  • Salt & black pepper, to taste
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 tablespoon olive oil
  • 8 oz mushrooms, sliced
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • ½ cup cream cheese, softened
  • 1 cup shredded mozzarella or cheddar cheese
  • ¼ cup grated Parmesan cheese
  • Optional: red pepper flakes or Italian seasoning

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Season chicken with salt, pepper, garlic powder, and paprika.
  3. Heat olive oil in a skillet over medium heat. Brown chicken 3–4 minutes per side (not fully cooked). Transfer to baking dish.
  4. In the same skillet, sauté mushrooms until softened.
  5. Add spinach and cook just until wilted.
  6. Lower heat and stir in cream, cream cheese, and Parmesan until smooth.
  7. Pour sauce over chicken and vegetables.
  8. Sprinkle with shredded cheese.
  9. Bake uncovered 25–30 minutes, until chicken is cooked through and bubbly.
  10. Rest 5 minutes before serving.
