Here’s a simple, classic chicken salad you can make quickly, plus a few easy variations.

Classic Chicken Salad

Ingredients

  • 2 cups cooked chicken, diced or shredded (rotisserie works great)
  • ½ cup mayonnaise
  • 1 stalk celery, finely chopped
  • 2 tbsp red onion or scallions, finely chopped
  • 1 tsp Dijon mustard (optional)
  • Salt & black pepper, to taste
  • 1–2 tsp lemon juice or vinegar

Instructions

  1. In a bowl, mix mayo, mustard, lemon juice, salt, and pepper.
  2. Add chicken, celery, and onion.
  3. Stir until evenly coated. Taste and adjust seasoning.
  4. Chill 15–30 minutes if you have time (better flavor).

Easy Variations

  • Healthy: Replace half (or all) of the mayo with Greek yogurt.
  • Crunchy: Add sliced almonds, walnuts, or sunflower seeds.
  • Sweet & Savory: Add halved grapes or diced apple.
  • Herby: Add fresh dill, parsley, or tarragon.
  • Spicy: Add a pinch of cayenne or a splash of hot sauce.

How to Serve

  • Sandwich or wrap
  • On crackers
  • Over greens
  • In a lettuce cup
