Ingredients
- 2 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 2 eggs, beaten
- ¼ cup milk
- ¼ cup grated Parmesan cheese
- 2 tbsp chopped green onions (optional)
- ½ tsp garlic powder
- Salt and black pepper to taste
- Butter or cooking spray for greasing the pan
Instructions
- Preheat oven
- Heat oven to 400°F (200°C).
- Grease a mini muffin tin or regular muffin pan.
- Mix ingredients
- In a bowl combine:
- mashed potatoes
- cheddar cheese
- eggs
- milk
- Parmesan
- green onions
- garlic powder, salt, and pepper
- Stir until well mixed.
- In a bowl combine:
- Fill the muffin tin
- Spoon the mixture into each cup, filling almost to the top.
- Bake
- Bake 20–25 minutes until the tops are golden and slightly crispy.
- Cool and serve
- Let them cool for 5 minutes, then gently remove from the pan.
