Cheesy Mashed Potato Puffs

Cheesy Mashed Potato Puffs are a great way to use leftover mashed potatoes. They’re crispy on the outside, soft and cheesy inside—perfect as a snack, side dish, or appetizer. 🧀🥔


Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 2 eggs, beaten
  • ¼ cup milk
  • ¼ cup grated Parmesan cheese
  • 2 tbsp chopped green onions (optional)
  • ½ tsp garlic powder
  • Salt and black pepper to taste
  • Butter or cooking spray for greasing the pan

Instructions

  1. Preheat oven
    • Heat oven to 400°F (200°C).
    • Grease a mini muffin tin or regular muffin pan.
  2. Mix ingredients
    • In a bowl combine:
      • mashed potatoes
      • cheddar cheese
      • eggs
      • milk
      • Parmesan
      • green onions
      • garlic powder, salt, and pepper
    • Stir until well mixed.
  3. Fill the muffin tin
    • Spoon the mixture into each cup, filling almost to the top.
  4. Bake
    • Bake 20–25 minutes until the tops are golden and slightly crispy.
  5. Cool and serve
    • Let them cool for 5 minutes, then gently remove from the pan.

✔ Serve with sour cream, ranch, or garlic dip.
