Cheesy Mashed Potato Puffs

🧀 Cheesy Mashed Potato Puffs

These are crispy on the outside, fluffy and cheesy on the inside — perfect for using up leftover mashed potatoes.

🥔 Ingredients

  • 3 cups cold mashed potatoes
  • 1 cup shredded cheddar (or your favorite cheese)
  • 2 eggs
  • ¼ cup grated Parmesan
  • 2 tablespoons melted butter
  • 2 tablespoons chopped chives or green onions (optional)
  • Salt & pepper to taste

👩‍🍳 Instructions

  1. Preheat oven to 400°F (200°C). Grease a mini muffin tin well.
  2. In a bowl, mix mashed potatoes, cheddar, eggs, Parmesan, butter, and seasonings.
  3. Spoon mixture into muffin cups, filling to the top.
  4. Bake 20–25 minutes until golden and slightly crispy on top.
  5. Let cool 5 minutes before removing.

🔥 Extra Crispy Tip

Sprinkle a little extra cheese on top before baking for a golden crust.


🧄 Flavor Variations

  • Add cooked bacon bits
  • Mix in minced garlic
  • Stir in sautéed onions
  • Swap cheddar for mozzarella or pepper jack
