Ohhh these are addictive 😄 Crispy outside, fluffy-cheesy inside—Cheesy Mashed Potato Puffs are perfect for using up leftover mash.

Cheesy Mashed Potato Puffs

Ingredients

  • 2 cups mashed potatoes (cold works best)

  • 1 cup shredded cheddar (or Colby-Jack)

  • 2 eggs

  • ¼ cup sour cream or milk

  • 2 Tbsp butter, melted

  • ¼ cup green onions or chives (optional)

  • ½ tsp salt

  • ¼ tsp black pepper

  • Optional add-ins:

    • Cooked bacon bits

    • Parmesan for extra crispiness

    • Garlic powder or paprika

Instructions

  1. Heat oven to 400°F (205°C). Grease a mini muffin tin really well.

  2. In a bowl, mix mashed potatoes, eggs, sour cream, melted butter, salt, and pepper until smooth.

  3. Fold in cheese and any add-ins.

  4. Spoon mixture into muffin cups (almost full).

  5. Bake 20–25 minutes until puffed and golden.

  6. Cool 5 minutes, then gently loosen and remove.

Pro Tips

  • 🧀 Extra cheese on top = extra crunch

  • ❄️ Cold potatoes puff better than warm

  • 🧈 Use a nonstick tin + grease well (they love to stick)

  • 🔥 For crispier edges, broil 1–2 minutes at the end

Serve With

  • Sour cream or ranch for dipping

  • Alongside steak, chicken, or breakfast eggs

  • As a party appetizer (they disappear fast)
