Cheesy Hamburger Potato Casserole

Ingredients

  • 1½ lb potatoes, peeled and diced (or 4–5 medium)
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika (optional)
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • ½ cup milk
  • 2 cups shredded cheddar cheese (divided)
  • 1–2 tbsp butter (optional, for extra richness)

Optional Toppings

  • Green onions, chopped
  • Extra cheese for the top
  • Crispy fried onions

Instructions

  1. Preheat Oven
    Preheat to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook Potatoes
    Boil diced potatoes until just tender (8–10 minutes). Drain.
  3. Cook Beef
    Brown ground beef with onion and garlic in a skillet. Drain excess fat. Season with salt, pepper, and paprika.
  4. Mix Casserole
    In a large bowl, combine cooked potatoes, beef mixture, cream of mushroom soup, milk, and 1½ cups shredded cheese. Stir until well combined.
  5. Assemble & Bake
    Pour mixture into prepared baking dish. Top with remaining ½ cup cheese. Dot with butter if using.
    Bake 25–30 minutes, until bubbly and golden.
  6. Serve
    Garnish with green onions or crispy fried onions if desired.

  • 🥔 For faster prep, use frozen diced potatoes (thawed) or hash browns.
  • 🧀 Mix in shredded mozzarella for extra gooeyness.
  • 🥩 Add cooked bacon or sausage for a meatier version.
