Cheesy Hamburger Potato Casserole

Ingredients

Casserole

  • 1½ lb (680 g) ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4–5 medium potatoes, peeled and thinly sliced (or use frozen hashbrowns)
  • 1 can (10.5 oz) condensed cream of mushroom soup (or cream of cheddar for extra cheesiness)
  • ½ cup milk
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika (optional)

Cheese

  • 2 cups shredded cheddar cheese (or a mix of cheddar and mozzarella)
  • ¼ cup Parmesan cheese (optional)

Topping (optional)

  • ½ cup crushed Ritz crackers or panko breadcrumbs
  • 2 tbsp butter, melted

Instructions


1. Preheat Oven

  • Preheat oven to 375°F (190°C).
  • Grease a 9×13-inch casserole dish.

2. Cook the Ground Beef

  1. In a skillet over medium heat, cook ground beef until browned.
  2. Add onion and garlic; sauté 2–3 minutes until soft.
  3. Drain excess fat.
  4. Season with salt, pepper, and paprika.

3. Prepare the Creamy Sauce

  1. In a bowl, mix the condensed soup with milk until smooth.
  2. Stir in 1 cup of shredded cheddar cheese.

4. Assemble the Casserole

  1. Layer half of the sliced potatoes in the bottom of the casserole dish.
  2. Spread half of the beef mixture over the potatoes.
  3. Pour half of the soup-cheese mixture over the top.
  4. Repeat layers with remaining potatoes, beef, and soup mixture.
  5. Top with remaining shredded cheese.

5. Add Topping (Optional)

  • Mix crushed crackers or panko with melted butter and sprinkle on top for extra crunch.

6. Bake

  • Cover with foil and bake 35–40 minutes.
  • Remove foil and bake an additional 10 minutes until cheese is melted and bubbly, and potatoes are tender.

7. Serve

  • Let rest 5–10 minutes before serving.
  • Garnish with chopped parsley if desired.

  • Extra Veggies: Add sliced bell peppers, mushrooms, or corn between layers.
  • Spicy: Add a dash of hot sauce or chopped jalapeños to the beef.
