cheesy ground beef and potato casserole

Here’s a simple, cozy cheesy ground beef and potato casserole that’s easy to make and super filling 🧀🥔

Ingredients

  • 1 lb ground beef
  • 4–5 medium potatoes, thinly sliced
  • 1 small onion, diced (optional)
  • 2 cups shredded cheese (cheddar or Colby-Jack work great)
  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • ½ cup milk
  • 1–2 cloves garlic, minced (optional)
  • Salt and pepper to taste
  • 1 tsp paprika or seasoning salt (optional)
  • Cooking spray or butter for the dish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Cook the beef in a skillet over medium heat with the onion and garlic. Season with salt, pepper, and paprika. Drain excess grease.
  3. Mix the sauce: In a bowl, stir together the soup and milk.
  4. Layer the casserole:
    • Layer half the sliced potatoes in the dish
    • Add half the ground beef
    • Pour half the soup mixture over it
    • Sprinkle with cheese
    • Repeat the layers
  5. Cover with foil and bake for 45–50 minutes, until potatoes are tender.
  6. Uncover, add a little extra cheese if you want, and bake another 10–15 minutes until bubbly and lightly golden.
  7. Let it rest for 5–10 minutes before serving.

Easy Add-Ins (Optional)

  • Frozen corn or peas
  • Cooked bacon bits
  • A little sour cream mixed into the soup
  • Italian seasoning or taco seasoning for a flavor twist
