Here’s a ridiculously easy, crowd-pleasing cheesy dip you can whip up fast.
Classic Queso-Style Cheesy Dip
Ingredients
- 2 tbsp butter
- 2 tbsp flour
- 1 cup milk (whole is best)
- 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
- Salt to taste
- Optional glow-ups: garlic powder, paprika, diced jalapeños, Rotel, green chiles
How
- Melt butter in a saucepan over medium heat.
- Whisk in flour and cook ~1 minute (don’t let it brown).
- Slowly whisk in milk until smooth. Let it thicken (2–3 min).
- Turn heat to low and add cheese a handful at a time, stirring till melty.
- Season + add any extras. Done. Dip immediately.
Ultra-Lazy Version (still slaps)
- 1 block Velveeta
- 1 can Rotel
Cube the Velveeta, microwave or melt on low, stir in Rotel. That’s it. Zero shame.
Fancy-ish Add-Ins (pick your vibe)
- Spicy: chorizo or hot sauce
- Smoky: smoked gouda or chipotle powder
- Meaty: cooked ground beef or shredded chicken
- Green: spinach or roasted poblanos
Serve with tortilla chips, pretzels, fries, or honestly… a spoon.
