Ingredients

  • 2 cups cooked chicken, finely chopped or shredded
    (rotisserie chicken works great)
  • 1 cup shredded cheese (cheddar, mozzarella, or Colby-Jack)
  • 2 eggs
  • ½ cup all-purpose flour
  • 2 tbsp mayonnaise or Greek yogurt
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • 2–3 tbsp oil for frying
  • Optional: chopped green onions or parsley

Instructions

  1. Mix the batter
    In a bowl, combine chicken, cheese, eggs, flour, mayo, garlic, salt, pepper, paprika, and herbs if using. Mix until well combined.
  2. Heat the pan
    Heat oil in a skillet over medium heat.
  3. Cook fritters
    Scoop about 2 tablespoons of mixture per fritter into the pan.
    Flatten slightly and cook 3–4 minutes per side until golden brown and heated through.
  4. Drain & serve
    Remove and drain on paper towels. Serve hot.

  • Over salad or with roasted veggies

  • Finely chopping the chicken helps fritters hold together
  • Don’t overcrowd the pan—cook in batches
