Here’s an easy, crowd-favorite Cheesy Baked Potato Rounds recipe—crispy edges, soft centers, and lots of melty cheese 🥔🧀


🥔 Cheesy Baked Potato Rounds

Ingredients

  • 3–4 medium russet or Yukon gold potatoes
  • 2 tablespoons olive oil or melted butter
  • Salt & black pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1½ cups shredded cheddar cheese (or Colby-Jack)
  • ¼ cup grated Parmesan cheese
  • Optional toppings: chopped green onions, bacon bits, sour cream

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Wash potatoes and slice into ¼-inch rounds. Pat dry.
  3. Toss potato slices with olive oil, salt, pepper, garlic powder, and paprika.
  4. Arrange rounds in a single layer on the baking sheet.
  5. Bake 25–30 minutes, flipping halfway, until potatoes are tender and lightly crispy.
  6. Remove from oven and sprinkle with cheddar and Parmesan.
  7. Return to oven and bake 5–7 minutes until cheese is melted and bubbly.
  8. Garnish with green onions or bacon bits and serve hot.

🌟 Tips & Variations

  • Use pepper jack for a spicy kick
  • Add a dollop of sour cream on top before serving
  • Make them extra crispy by broiling 1–2 minutes at the end
  • Serve with ranch, garlic aioli, or chipotle mayo for dipping
