Cauliflower soup

Simple, cozy, and surprisingly rich 🤍🥣 Cauliflower Soup can be silky and comforting without being heavy.

Creamy Cauliflower Soup

Ingredients

  • 1 large head cauliflower, chopped

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 3 Tbsp butter or olive oil

  • 4 cups chicken or vegetable broth

  • 1 cup milk or heavy cream (or half-and-half)

  • Salt & black pepper, to taste

  • Optional garnish: chives, parsley, croutons, olive oil drizzle


Instructions

  1. In a pot, melt butter over medium heat.

  2. Sauté onion until soft (5 minutes).

  3. Add garlic, cook 30 seconds.

  4. Add cauliflower and broth. Bring to a boil.

  5. Reduce heat and simmer 20 minutes, until cauliflower is very tender.

  6. Blend until smooth (immersion or blender).

  7. Stir in milk or cream. Season to taste.

  8. Warm gently and serve.


Flavor Boosters (Optional)

  • 🧀 Parmesan or sharp cheddar

  • 🧄 Roasted garlic instead of raw

  • 🌰 Nutmeg (tiny pinch = magic)

  • 🥓 Bacon bits on top

  • 🌶️ White pepper or chili oil

Lighter / Dairy-Free Version

  • Use olive oil

  • Swap milk for coconut milk or extra broth

  • Still creamy thanks to the cauliflower

Pro Tips

  • Roast the cauliflower first (425°F, 25 min) for deeper flavor

  • Don’t skimp on salt—it wakes everything up

  • Blend longer than you think for ultra-silky texture
