🧈 Butter Swim Biscuits (aka chaos biscuits)

Ingredients

  • 2½ cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp sugar (optional but nice)
  • 1 tsp salt
  • 1¾ cups buttermilk (cold is fine)
  • ½ cup (1 stick) butter

Instructions

  1. Heat oven to 450°F (230°C).
  2. Put the butter in an 8×8 baking dish and slide it into the oven until fully melted. Take it out (don’t brown it).
  3. In a bowl, whisk together flour, baking powder, sugar, and salt.
  4. Stir in the buttermilk until just combined. The dough will be very wet—that’s correct, don’t panic.
  5. Carefully pour the dough directly into the melted butter. Do not stir.
  6. Use a knife to lightly score into 9 squares (optional but helps with serving).
  7. Bake 20–25 minutes until golden brown on top and crispy around the edges.
  8. Cool slightly, then demolish.

  • No buttermilk? Mix 1¾ cups milk + 1½ tbsp vinegar or lemon juice, rest 5 minutes.
  • Want savory vibes? Add garlic powder, black pepper, shredded cheddar, or herbs.
