Here’s a simple, moist Blueberry Loaf that works every time.
Blueberry Loaf (Soft & Buttery)
Ingredients
- 1½ cups all-purpose flour
- ¾ cup sugar (white or light brown)
- 2 tsp baking powder
- ¼ tsp salt
- ½ cup milk (or yogurt for extra moisture)
- ⅓ cup vegetable oil or melted butter
- 1 large egg
- 1 tsp vanilla extract
- 1–1¼ cups blueberries (fresh or frozen)
- 1 tsp flour (to toss blueberries)
Instructions
- Preheat oven to 350°F (175°C). Grease or line a loaf pan.
- In a bowl, whisk flour, baking powder, salt, and sugar.
- In another bowl, mix milk, oil/butter, egg, and vanilla.
- Combine wet and dry ingredients until just mixed (don’t overdo it).
- Toss blueberries with 1 tsp flour, then gently fold them in.
- Pour batter into the pan and smooth the top.
- Bake 50–60 minutes, or until a toothpick comes out clean.
- Cool 10 minutes in the pan, then transfer to a rack.

- Crunch top: sprinkle sugar or sliced almonds before baking
