Blueberry Loaf

Ahhh, classic comfort bake 🫐🍞
Here’s a simple, moist Blueberry Loaf that works every time.


Blueberry Loaf (Soft & Buttery)

Ingredients

  • 1½ cups all-purpose flour
  • ¾ cup sugar (white or light brown)
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup milk (or yogurt for extra moisture)
  • ⅓ cup vegetable oil or melted butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 1–1¼ cups blueberries (fresh or frozen)
  • 1 tsp flour (to toss blueberries)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan.
  2. In a bowl, whisk flour, baking powder, salt, and sugar.
  3. In another bowl, mix milk, oil/butter, egg, and vanilla.
  4. Combine wet and dry ingredients until just mixed (don’t overdo it).
  5. Toss blueberries with 1 tsp flour, then gently fold them in.
  6. Pour batter into the pan and smooth the top.
  7. Bake 50–60 minutes, or until a toothpick comes out clean.
  8. Cool 10 minutes in the pan, then transfer to a rack.

Optional Upgrades 😋

  • Lemon twist: add 1 tbsp lemon zest
  • Crunch top: sprinkle sugar or sliced almonds before baking
  • Glaze: mix powdered sugar + lemon juice and drizzle once cooled
