Blueberry Donuts

Here’s a simple, reliable blueberry donuts recipe—soft, flavorful, and packed with berries. I’ll give you a baked version (easy, no fryer) and a quick note on how to adapt it for frying if you prefer.


🍩 Baked Blueberry Donuts

Ingredients (makes ~8–10 donuts)

  • 1 cup all-purpose flour
  • ½ cup sugar
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ tsp cinnamon (optional)
  • ⅓ cup milk (or buttermilk)
  • 1 large egg
  • 2 tbsp melted butter (or neutral oil)
  • 1 tsp vanilla extract
  • ¾ cup blueberries (fresh or frozen)

Instructions

  1. Preheat oven to 350°F / 175°C. Grease a donut pan.
  2. Mix dry ingredients: flour, sugar, baking powder, baking soda, salt, cinnamon.
  3. Mix wet ingredients: milk, egg, butter, vanilla.
  4. Combine wet + dry until just mixed (don’t overmix).
  5. Fold in blueberries gently. If frozen, don’t thaw.
  6. Pipe or spoon batter into donut pan (about ¾ full).
  7. Bake 12–15 minutes, until lightly golden and springy.
  8. Cool 5 minutes, then remove from pan.

Optional Glaze (Highly Recommended 😄)

  • 1 cup powdered sugar
  • 1–2 tbsp lemon juice or milk
  • (Optional) mashed blueberries for color

Whisk and dip cooled donuts.

  • Use the same batter, but reduce milk slightly (to ~¼ cup).
  • Chill batter 30 minutes.
  • Drop spoonfuls into 350°F oil, fry 1–2 minutes per side.
  • Drain and coat in sugar or glaze.
