- 1 lb (450 g) beef sirloin or tenderloin, thinly sliced
- 2 tbsp butter
- 1 tbsp olive oil

- 8 oz (225 g) mushrooms, sliced
- 1 tbsp flour
- 1 cup beef broth
- 1 tbsp Dijon mustard
- 1 cup sour cream
- Salt & black pepper, to taste

Instructions
- Cook the beef
Heat olive oil and 1 tbsp butter in a pan over medium-high heat.
Season beef with salt and pepper, then sear quickly (about 1–2 minutes per side).
Remove beef and set aside. - Sauté vegetables
In the same pan, add remaining butter.
Cook onion until soft, then add mushrooms and cook until browned.
Stir in garlic for 30 seconds. - Make the sauce
Sprinkle flour over the mushrooms and stir for 1 minute.
Slowly add beef broth, stirring to avoid lumps.
Add Dijon mustard and simmer until slightly thickened. - Finish
Lower heat and stir in sour cream (don’t boil).
Return beef to the pan and heat gently for 1–2 minutes. - Serve
Garnish with parsley if you like.
Serve over egg noodles, rice, or mashed potatoes.
