🍗 Baked Sweet & Sour Chicken
Ingredients (4 servings)
Chicken
- 700 g (1½ lb) chicken breast or thighs, bite-size
- Salt & pepper
- 2 eggs, beaten
- ½ cup cornstarch
- ½ cup flour
- Cooking spray or oil
Sweet & Sour Sauce
- ½ cup ketchup
- ⅓ cup sugar
- ¼ cup rice vinegar (or white vinegar)
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- ½ cup pineapple juice (or water)
- Optional: pineapple chunks, bell peppers, onion
Instructions
1️⃣ Heat oven
- Preheat to 220°C / 425°F
- Line a baking tray with parchment.
2️⃣ Coat the chicken
- Season chicken.
- Dip in egg → cornstarch → flour.
- Place on tray, spray or drizzle lightly with oil.
3️⃣ Bake till crispy
- Bake 15 minutes, flip.
- Bake another 10 minutes until golden.
4️⃣ Make the sauce
- Whisk all sauce ingredients in a bowl.
5️⃣ Combine & bake again
- Reduce oven to 200°C / 400°F.
- Pour sauce over chicken.
- Add pineapple/veggies if using.
- Bake 10–15 minutes, stirring once, until sticky and glossy.
