Here’s a simple, tasty Baked Cottage Cheese Eggs recipe—great for breakfast meal prep or a light brunch 🥚🧀

Ingredients (2–3 servings)

  • 4 large eggs
  • 1 cup cottage cheese (small curd works best)
  • ½ cup shredded cheese (cheddar, mozzarella, or Swiss)
  • ¼ cup milk or cream (optional, for extra fluffiness)
  • Salt & pepper, to taste
  • Optional add-ins:
    • Chopped spinach or kale
    • Diced bell peppers or onions
    • Cooked bacon, sausage, or ham
    • Fresh herbs (chives, parsley, dill)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a small baking dish or ramekins.
  2. Whisk eggs in a bowl until well combined.
  3. Stir in cottage cheese, milk (if using), shredded cheese, salt, and pepper.
  4. Fold in add-ins if using.
  5. Pour mixture into the baking dish.
  6. Bake for 25–30 minutes, or until set in the center and lightly golden on top.
  7. Rest 5 minutes, then slice or scoop and serve.

Tips

  • For a smoother texture, blend the cottage cheese before mixing.
