Bake Samoa Cookies

Posted on March 9, 2026 by Admin

Samoa Cookies (also known as Caramel Coconut Cookies) are buttery cookies topped with toasted coconut, gooey caramel, and chocolate drizzle—similar to the famous Girl Scout treat. 🍪🥥🍫

Ingredients

For the cookies

  • 1 cup unsalted butter, softened
  • ½ cup sugar
  • 2 cups all-purpose flour
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 2 tbsp milk

For the topping

  • 2 cups sweetened shredded coconut
  • 12 oz soft caramels (or caramel bits)
  • 3 tbsp milk
  • 1 cup semisweet chocolate chips

Instructions

1. Make the cookie dough

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, cream butter and sugar until smooth.
  3. Mix in vanilla and milk.
  4. Add flour and salt, mixing until a dough forms.

2. Shape the cookies

  1. Roll dough to about ¼ inch thick.
  2. Cut into round cookies and cut a small hole in the center (donut shape).
  3. Place on a lined baking sheet.

3. Bake

Bake for 10–12 minutes until lightly golden.
Let cookies cool completely.

4. Toast the coconut

Spread coconut on a baking sheet and bake at 350°F (175°C) for 5–8 minutes, stirring until golden.

5. Make the caramel topping

In a saucepan or microwave, melt caramels with 3 tbsp milk, stirring until smooth.
Mix the toasted coconut into the caramel.

6. Assemble

  • Spread a thin layer of caramel on each cookie.
  • Add the caramel–coconut mixture on top.

7. Add chocolate

  • Melt the chocolate chips.
  • Dip the bottom of each cookie in chocolate and place on parchment paper.
  • Drizzle chocolate over the top.

Let the cookies set until the chocolate hardens.

✅ Tip: Chill the cookies in the fridge for 10–15 minutes to set the chocolate faster.
