Here’s a Bacon Cheeseburger Grilled Cheese Casserole that’s cheesy, beefy, toasty, and over-the-top delicious — like a mashup of grilled cheese + bacon cheeseburger in one cozy bake. Super easy and family-friendly!


🧀🥓 Bacon Cheeseburger Grilled Cheese Casserole

Ingredients

For the beef mixture

  • 1 lb ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 tbsp Worcestershire sauce

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 cup cooked, chopped bacon (about 6–8 slices)

  • 1 cup shredded cheddar or cheddar jack

For the grilled-cheese bread

  • 12 slices sandwich bread (white or Texas toast works best)

  • 4–6 tbsp softened butter (for spreading)

  • 2 cups shredded cheddar or American cheese slices

Optional add-ins

  • ¼ cup ketchup

  • 2 tbsp mustard

  • ¼ cup pickle relish (or chopped pickles)

  • Hot sauce

  • 1 tbsp burger seasoning (optional but tasty)


🥣 Instructions

1. Make the beef mixture

  1. In a large skillet, cook ground beef and onion until browned.

  2. Drain excess grease.

  3. Add garlic, Worcestershire, salt, and pepper.

  4. Stir in bacon and 1 cup shredded cheese.

  5. Add ketchup/mustard/pickles if you want a true “cheeseburger” flavor.
    Remove from heat.


2. Prepare the grilled-cheese bread

  1. Butter one side of each slice of bread.

  2. Lay half the slices (butter-side down) in a 9×13 baking dish.

  3. Add cheddar or American cheese on top of each slice—about 2–3 tablespoons of cheese per slice.

  4. Top with the remaining slices of bread, butter-side up, making grilled cheese “sandwiches” inside the casserole dish.


3. Toast the bread (optional but makes it amazing)

Bake the sandwiches at 400°F (200°C) for 10–12 minutes, flipping halfway, until both sides are golden.

(If skipping this step, the casserole will still be delicious, just softer.)


4. Chop the grilled cheese

Remove from the oven and cut each sandwich into 4–6 pieces (like big croutons).

Leave them in the baking dish or transfer them out temporarily — whichever is easier for layering.


5. Assemble the casserole

  1. Scatter half of the grilled-cheese chunks into the baking dish.

  2. Spoon the entire beef mixture evenly over them.

  3. Top with the remaining grilled-cheese pieces.

  4. Sprinkle extra cheese on top.


6. Bake final casserole

Bake at 350°F (175°C) for 20–25 minutes, until bubbly and the top is golden.

  • Ketchup + mustard drizzle

  • Crisp salad

  • Fries or tater tots


🔧 Variations

  • Big Mac style: Add shredded lettuce on top after baking + chopped pickles + sesame seeds.

  • Spicy: Use pepper jack cheese and add jalapeños.

  • Breakfast version: Swap beef for sausage and add scrambled eggs.

  • Low-carb: Use low-carb bread or sprinkle a layer of cooked cauliflower instead.
