Apple pie

Here’s a classic homemade apple pie recipe that’s simple and always works 🥧

Classic Apple Pie

Ingredients

Pie Crust (or use 1 double-store-bought crust):

  • 2½ cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 cup (2 sticks) cold butter, cubed
  • 6–8 tbsp ice water

Apple Filling:

  • 6–7 cups apples, peeled and sliced (Granny Smith, Honeycrisp, or a mix)
  • ¾ cup sugar (use half white, half brown for deeper flavor)
  • 2 tbsp all-purpose flour (or cornstarch)
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • Pinch of salt

Optional topping:

  • 1 egg + 1 tbsp milk (egg wash)
  • Coarse sugar for sprinkling

Instructions

  1. Make the crust (skip if using store-bought):
    Mix flour, salt, and sugar. Cut in butter until crumbly. Add ice water a little at a time until dough forms. Divide in half, wrap, and chill 30 minutes.
  2. Prepare the filling:
    In a large bowl, toss apples with sugar, flour, cinnamon, nutmeg, lemon juice, vanilla, and salt.
  3. Assemble:
    Preheat oven to 425°F (220°C).
    Roll out one crust and place in a 9-inch pie dish. Fill with apple mixture. Dot with a little butter if desired. Cover with top crust, seal edges, and cut slits.
  4. Finish:
    Brush with egg wash and sprinkle with sugar.
  5. Bake:
    • Bake at 425°F for 20 minutes
    • Reduce to 375°F (190°C) and bake 30–40 more minutes, until golden and bubbly
  6. Cool:
    Let cool at least 2 hours before slicing (helps it set).

Tips & Variations

  • Extra crisp: Add 1 tbsp cornstarch instead of flour.
  • Dutch apple pie: Replace top crust with streusel topping.
  • Serve with: Vanilla ice cream or sharp cheddar cheese 😄
