Classic Apple Pie
Ingredients
Pie Crust (or use 1 double-store-bought crust):
- 2½ cups all-purpose flour
- 1 tsp salt
- 1 tbsp sugar
- 1 cup (2 sticks) cold butter, cubed
- 6–8 tbsp ice water
Apple Filling:
- 6–7 cups apples, peeled and sliced (Granny Smith, Honeycrisp, or a mix)
- ¾ cup sugar (use half white, half brown for deeper flavor)
- 2 tbsp all-purpose flour (or cornstarch)
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- Pinch of salt
Optional topping:
- 1 egg + 1 tbsp milk (egg wash)
- Coarse sugar for sprinkling
Instructions
- Make the crust (skip if using store-bought):
Mix flour, salt, and sugar. Cut in butter until crumbly. Add ice water a little at a time until dough forms. Divide in half, wrap, and chill 30 minutes. - Prepare the filling:
In a large bowl, toss apples with sugar, flour, cinnamon, nutmeg, lemon juice, vanilla, and salt. - Assemble:
Preheat oven to 425°F (220°C).
Roll out one crust and place in a 9-inch pie dish. Fill with apple mixture. Dot with a little butter if desired. Cover with top crust, seal edges, and cut slits. - Finish:
Brush with egg wash and sprinkle with sugar. - Bake:
- Bake at 425°F for 20 minutes
- Reduce to 375°F (190°C) and bake 30–40 more minutes, until golden and bubbly
- Cool:
Let cool at least 2 hours before slicing (helps it set).

- Extra crisp: Add 1 tbsp cornstarch instead of flour.
