Apple Fritter Bread

Ingredients

For the Bread

  • 2 cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves (optional)
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream or plain yogurt
  • 2 cups peeled, chopped apples (Granny Smith or Honeycrisp work well)

For the Cinnamon Swirl

  • ¼ cup brown sugar
  • 1 tsp cinnamon
  • 1 tbsp butter, melted

For the Glaze (optional)

  • ½ cup powdered sugar
  • 1–2 tsp milk or cream
  • ½ tsp vanilla extract

Instructions

  1. Preheat Oven & Prep Pan
    • Preheat oven to 350°F (175°C).
    • Grease and flour a 9×5-inch loaf pan.
  2. Mix Dry Ingredients
    • In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. Cream Butter & Sugar
    • In a large bowl, cream together butter and sugar until light and fluffy.
    • Beat in eggs one at a time, then add vanilla and sour cream.
  4. Combine Wet & Dry
    • Gradually stir in the dry ingredients until just combined.
    • Fold in chopped apples.
  5. Add Cinnamon Swirl
    • In a small bowl, mix brown sugar, cinnamon, and melted butter.
    • Pour half the batter into the loaf pan.
    • Sprinkle half the cinnamon swirl mixture.
    • Add the remaining batter and top with the remaining swirl mixture. Use a knife to gently swirl.
  6. Bake
    • Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
    • Cool in pan 10 minutes, then transfer to a wire rack.
  7. Glaze (Optional)
    • Whisk powdered sugar, milk, and vanilla until smooth.
    • Drizzle over cooled bread.

  • Apple choice matters: Tart apples hold up better; sweeter ones add extra flavor.
  • Extra crunch: Sprinkle chopped nuts on top before baking.
  • Storage: Wrap tightly; stays moist for 2–3 days at room temp or freeze slices for later.
