🍫 No-Bake Chocolate Oatmeal Bars
Ingredients
Base Layer
- 1 cup (230 g) unsalted butter
- ½ cup (100 g) brown sugar
- 1 tsp vanilla extract
- 3 cups (270 g) old-fashioned rolled oats
- ¼ tsp salt
Chocolate Layer
- 1 cup (175 g) semisweet chocolate chips
- ½ cup (125 g) creamy peanut butter (or almond butter / sunflower butter)
Instructions
- Prepare the pan
Line an 8×8 or 9×9 inch pan with parchment paper. - Make the oat mixture
- In a medium pot, melt the butter and brown sugar over medium heat.
- Stir until the sugar dissolves.
- Add vanilla, salt, and oats.
- Cook for 2–3 minutes, stirring so everything is well coated.
- Create the chocolate layer
- In a microwave-safe bowl or over a double boiler, melt the chocolate chips with the peanut butter.
- Stir until smooth.
- Assemble
- Press half the oat mixture into the bottom of the lined pan.
- Pour and spread the chocolate mixture on top.
- Add the remaining oat mixture and press gently to form the top layer.
- Chill
Refrigerate for 2–3 hours, or until fully set.
Slice into bars and serve.
